Scrambled Spinach Eggs

Ingredients

1/2 C Spinach, fresh

2 large Egg, fresh, whole, raw

1 tbsp Extra Virgin Olive Oil

1/4C  Colby and Monterey Jack Cheese shredded

 

Tips

This recipe is also great with feta or goat cheese.

 

Directions

Heat EVOO in a small skillet for about 1 minute. Meanwhile, whip eggs slightly and toss in your spinach leaves. Dump eggs and spinach into skillet. Stir and flip until eggs are thoroughly cooked. The spinach will wilt in the time it takes to make scrabbled eggs. Add salt and pepper if you like, to taste. Top with shredded cheese and enjoy.
